PROVOST JOHN Hulbert yesterday met an award-winning young chef who has set up business in Blairgowrie and pledged to make the most of local produce.
Ben Dingwall will be incorporating locally produced fruit and other specialities into his menus whenever he can.
Ben and his business partner Daz Brooke-Lander recently took over the Antiquary Restaurant at Roy Sim Antiques, Lower Mill Street, and yesterday they told Dr Hulbert of their plans.
They intend to develop their daytime business for coffee and lunches and then use the unique setting of the antiques showroom for their fine dining and other events.
Ben, who trained in fine restaurants in London and Bermuda, has already seen the potential of the young chefs being produced by Blairgowrie High School and sees them as another great asset for the town.
