Seaweed ice cream making waves at Crail Food Festival

Usually the only thing ice-cream and seaweed have in common is their presence on beaches on sunny days.

But the sweet and the salty have come together in a new treat for Crail Food Festival.

St Andrews business Janettas Gelateria teamed up with Mara Seaweed, from Edinburgh, to create seaweed ice-cream for the Fife coastal village event.

The flavour is the latest bold combination from Janettas, which has previously used wasabi and even cheese in its ices.

Co-owner Owen Hazel said: “When Crail Food Festival approached us with the idea of collaborating with Mara, we thought it was a fantastic idea.

“It has been a fun challenge to see how we could combine the flavours.”

The main ingredients are Shony, an award-winning blend of seaweeds hand-harvested from the seabed around Crail, and lemon, with some green tea and chocolate for good measure.

Celebrity chef Paul Hollywood called the combination of Shony and lemon “inexplicably delicious” when it was experimented with in a polenta pie when he visited Mara Seaweed.

Mara co-founder Fiona Houston said: “Our Shony blend is an intriguing mix of sweet and salty seaweeds that can be used in sweet and savoury dishes.

“It has been great fun working with Janettas, as I have been a huge fan of their ice-cream since my school days.”

If it proves a hit at the festival the flavour may be sold in Janettas’ shop and other outlets.
