Scots chef claims guinea pig haggis ‘tasted awesome’

A Scots chef travelled to Peru to create the world’s first guinea pig haggis.
Paul Wedgwood left his Edinburgh restaurant to fly to Lima in order to concoct the controversial dish ahead of Burns Night.
Having previously cooked pigeon and squirrel haggis, the culinary creative used guinea pig in his latest endeavour, with the help of local chef Mitsuharu Tsumura at his restaurant, Maido.
Paul said: “The whole experience was amazing and the haggis tasted awesome.”
Haggis isn’t just for Burns Night or to be served solely with neeps and tatties, according to Paul, who aspires to raise the dish up to new gastronomic levels and establish it as a gourmet classic.
